VERUM MADRIGAL OLD VINES AIRÉN

MADRIGAL vineyard is located between  the natural región of  La Mancha to Campo de Montiel region at 720 m above sea level on a land with gentle slopes. This AIRÉN vineyard  was planted in the early 60s of the 20th century, following the strict dry viticulture and typical pruning from La Mancha. It can be assured this estate has been ecological since the very begining due to the type of soil and climate conditions . It iseco  certified since 2013.

The soil is different, rich in limestone and pebbles on the surface, sandy loam with clay

The flowering was Good and the Summer was fresher compared to the average of past years. The harvest was manual in 15 kg boxes in the last week of September; in the early morning hours, the clusters went through the sorting table and into the tank for a 24 hours pre-fermentation maceration. Subsequently, the must is devatted (without pressing) and racked to another tank for fermentation at low temperature.

After fermentation, the wine is aged for two months in 4500 lts. clay jars and
then 4 months in stainless steel tanks until bottling. This wine had a natural clarification according to the minimal intervention approach. Over time, some cloudiness might appear, which has no effect on the quality of the wine.

VISUALLY,
it is pale lemon yellow coloured with golden reflections.

In the NOSE, it is intense, varietal carácter, memories of banana and white fruit (apple and pear), together with herbal infusion (chamonille), and a  mineral touch (pebbles)

On the PALATE, it is unctuous, dense with increasing acidity that leads to a fresh salty sensation that provides flavor and power. The aftertaste brings aromatic memories back, those of White fruit, chamomille and fennel for a balsamic end.

GASTRONOMY:

It is its cleanliness and mineral carácter what makes it ideal for Mediterranean gastronomy. We might match it with cold dishes like cordovan salmorejo or ajoblanco, goat cheese salads with raisins or smoked fish. We may also try with some Cantabrian anchovies and tuna mojama. And last but not least, with fish or even shellfish.

Crianza: 2 months in big clay jars with lees and  4 months in stainless Steel tank.

 

Serving temperature: 6º – 8ºC
